Sobon Estate, 2007 Chardonnay Monterey, $20

Winemaker Paul Sobon keeps his eye on fruit around the Shenandoah Valley and found these grapes at the highly touted Sheid Vineyards, and created a new label --NOBOS (Sobon, spelled backward). It's a $20 wine that's just stacked with flavors. It starts on the nose with apple peel, mandarin orange and pear, and moves on to key lime pie and butter on the palate. It finishes with layers of acidity, smoke, vanilla. The finish (the flavors when you swallow) scream. It's a unique wine for its (gentle) oak and acidity. Do try it with grilled salmon, baked cod and roast chicken.
