St. Supery, 2005 Elu Red Wine Napa Valley, $60

The elite winery's top-drawer line, Elu, includes this "Red Wine," a blend of Bordeaux varietals that is remarkable for its purity and balance. Overall, the tannins are silky smooth, there's acidity for backbone, the flavors are ripe berries, dark plums, dark chocolate, espresso and vanilla. The resounding flood of flavors on the palate is impressive. It's so perfectly constructed you would be tempted to prefer the wine over food. But, oh, what a match with grilled beef steak, veal chops, lamb and hearty pastas. It's elegant and dances on the palate.
